English muffin would not be a good choice for a diabetic, especially with the egg yolk removed from the equation. Fat slows down the absorption of carbs.

It wasn't in specific reference to a diabetic. It was a you can do this too to eat healthy. They make plenty of low carb options for english muffins, at least in my area. Just as they do for bread and sandwich thins. It's a very easy thing to adapt for a diabetic. You can also add another source of protein such as turkey sausage.

I love homemade Kale chips. I love kale in general, but kale chips yummy! They are high in iron, low in calories, and they definitely satisfy that salty craving for me.


How do you make the kale chips? I've been wanting to use kale more and only have 1 recipe I currently use it in.



I cut the stems off of the kale. Then I segment the kale. In another bowl I add a tablespoon or less of extra virgin olive oil(Depends on how much kale I have. You don't want to put too much on the kale otherwise it's greasy.) , some minced garlic, a pinch of coarse sea salt, and sometimes pepper. I mix that all up and then rub it on the kale. I put some aluminum foil on a baking sheet. Put the kale on the baking sheet and bake at 400 degrees until it just starts to turn brown around the edges. They are good for about three days max. If they get moisture in them I just throw them back in the oven for a bit till they crisp up again.

I like to throw it in a pan with some fresh green beans, ginger, garlic, mushrooms, onions, and bell peppers. You can add a bit of olive oil let it get hot, then add the garlic, ginger, and onions. Let them cook for a minute or two till you smell the ginger, then add the other veggies. The flavor is great!


I also have a recipe for orange infused green beans and sometimes I use that for the kale.

True. But, what do they have to do to achieve low carb-ness? Honestly, if you're eating low carb, it's just best to leave all breads out. They can trigger cravings and they're empty carbs, even if they're low carb.

Oh yeah Kaliko, I do. Amy's cafe serves this awesome family meal deal for only 20 bucks, and it's a huge thing of rice, and a huge thing of chowmein and a a small thing of broccoli beef and sweet and sour 4 egg rolls and 6 fried cream cheese and crab ragoons. But I don't like th eir egg rolls, so I get the eggrolls replaced with more cream cheese ragoons.


Daddy and i can sit there and between the two of us eat all that in one sitting. it's so good and so easy to do. Last time we got Amy's though I showed mega restraint and measured out thefood, I didn't just blindly eat.

Best to aim for real food, especially if your metabolism is damaged.

If you want to bypass that on occasion, do intense work in the gym.

Imo.

My dad makes Kale and it's disgusting and bitter. I won't eat it when he makes it, but then again I do know that it's different each way and each cook that cooks it.

I don't know what they do. Typically sandwich thins and the low carb bread just tend to be a lot thinner (or seem to be). I don't naturally eat a ton of carbs( or even a lot of carbs), so in all honesty for me eating bread or an english muffin doesn't usually require a second thought. (I'm also not diabetic). I tend to eat just enough so that I don't get a huge major sugar craving right before bed. A trainer taught me that. I also tend to gravitate more towards small portions of sweet potatoes, brown rice, quinoa, lentils, and soba noodles. (If I'm going to actively eat a carb group)

All though all the things I've been reading about processed wheat and the things they do to bread you are right it's probably just best to skip it all together. I think I might try my hand at homemade bread.

I'm with Lily, I love sauteed kale.

Here's a recipe:

Ingredients
1 1/2 pounds young kale, coarsely chopped
3 tablespoons olive oil
2 cloves garlic, finely sliced
1/2 cup vegetable stock or water
Salt and pepper
2 tablespoons red wine vinegar

Directions
Heat olive oil in a large saucepan over medium-high heat. Add the garlic and cook until soft, but not colored. Raise heat to high, add the stock and kale and toss to combine. Cover and cook for 5 minutes. Remove cover and continue to cook, stirring until all the liquid has evaporated. Season with salt and pepper to taste and add vinegar.


When you prepare the kale, you have to remove those big veins, they are quite easy to just cut out. Leaving them in can cause the kale to be bitter.

I dont know how balsamic is viewed for diabetics tho..

eta- I also love grilled veggies, grilled either on a real bbq or george forman grill.. some people put a balsamic marinade on their grilled veggies.. i have to try that one day too..

All diabetics are a bit different. 1/2 of an english muffin was a staple of my breakfast for years and I'm a severe juvenile diabetic. They work better for me than the vast majority of breads.

While the flavor is quite different, balsamic vinegar has the same blood sugar regulating properties as other vinegars so it's definitely a good thing for diabetics.

On a related note, pickles are also a good health choice.

I do a version of this as well, but I layer the muffin tin with a slice or 2 of turkey or ham.
I like using Egg Beaters instead of a whole egg, as they are less in calories, carbs, and cholesterol.
They have Egg Beaters Florentine, which has spinach and tomato added. Yummyoso!

I used to make a health smoothie for breakie with hemp protein, frozen blueberries or raspberries, frozen banana chucks, ground flax, fish oil and a little oj and put that in my bullet, it would come out the consistancy of soft ice cream, thick, creamy and cold.. so it was more like a treat than something good for you.. gawd i wish i had my bullet again.. [:(]

I saw this yonanas machine recently and thinking about buying it, it turns over-ripe frozen bananas or any frozen fruit into "soft ice cream".. its just fruit but there are variations like adding peanut butter too, etc..
