Mmm that sounds good, like a mini quiche. I'm going to have to try that. I love eggs for breakfast, and if I'm in a hurry this would be a great way to do that (and get some veggies).

ETA: what temp do you bake it at, and for how long?

When you prepare the kale, you have to remove those big veins, they are quite easy to just cut out. Leaving them in can cause the kale to be bitter.




I make basically this, and add a can of chickpeas for some protein. It's really yummy. Somehow the vineger (I usually use balsamic) helps cut down on the bitterness of the kale.

The other way I make it is to boil 1/2 box of whole wheat spaghetti with 1 lb of kale, and then when it's cooked, toss it with a mix of soy sauce, sesame oil and red pepper flakes. Like maybe 3 tbsp soy sauce, 1 tbsp oil and a pinch of red pepper?

They're both good healthy quick dinner fixes, especially since you can get bags of kale that's already cut up so you don't even have to do any prep.

You need to make sure that your kale has seen frost, that cuts down on the bitterness a lot.

The traditional German way to serve kale is really not healthy, so I am going to omit that here.

Every single frozen egg-based meal I've ever come across turns out this way - whether it's store bought or made and frozen at home.
I stopped doing that years ago because it's just gross compared to a freshly-made scrambled egg, or quiche or other similar stuff.
And considering how quick it is to throw together a scrambled egg with whatever you want to throw into it, freezing it for later and totally spoiling it is crazy IMHO.

I can put together a scrambled egg and whatever I want in it, from fresh, quicker than it takes to thaw out sensibly and re-heat in a microwave.
By all means, chop your broccoli or mushrooms or bell peppers etc and freeze those in zip-lock bags because that will save on the prep and they freeze quite well.
By the time the eggs are cooked, your frozen chopped additives have thawed and are nice and hot.
How long does it take to grab the block of cheese from the fridge and grate it into the cooking eggs?
And if you freeze your pre-prepared bits in separate bags, you can pick and choose which ones you want to throw in into it.
I've done this many times and it's infinitely better tasting (and a far better texture) than freezing the final cooked product.


Certain things just don't freeze very well and cooked eggs is one of them.
Cheese isn't much better IMHO.

Well if you're like Master, he jumps in the shower, gets dressed, grabs his coffee that has already brewed because it was prepared the night before and he's out the door. No time to stand over a stove and you can't exactly put eggs on a stove while you're in the shower whereas a microwave, you can. Get up earlier? He already gets up at 5am. The man needs at least a few hours of sleep? Have me prepare his food? I've told that to him till I'm blue in the face. He won't do it because he doesn't like to wake me when I actually sleep since I don't get enough as is.

So while your way is ideal, most just don't have that kind of time in the mornings as they rush out the door so they don't get stuck in traffic for an hour and being late for work.

Brown rice pancakes (with egg whites or light flour to make it stick together) are great for spreading a bit of cream cheese, pesto, or peanut sauce on it for a quick lunch. Just mash together and flatten, then place in a frying pan lightly coated with olive oil and wait until the edges are crispy. It's so yummy, filling and very healthy.

that really depends on the cheese.. soft cheese doesnt freeze, & low fat cheese doesnt freeze well, regular fat cheddar cheese freezes just fine although it crumbles after its been frozen rather than you be able to slice it.. My parents used to get big blocks of that, cut it into smaller blocks and freeze it.. tastes the same once cooked in or on something..

I dont eat eggs, but I have made scrambled tofu (fake scrambled eggs) & used a few spices in it (tumeric will give it a yellow color + its an anti-oxident and good for you).. I would like to try some of the other ideas like adding in all sorts of veggies, etc.. I have never tried to microwave scrambled tofu tho so no idea what happens if you try..

My dad opened a can of garbonzo beans, took one bite then spit them right back out. They tasted NASTY. Wasit cuz they were not rinced, or maybe they went bad?

I don't know how much difference not rinsing would make to the flavour since I've never tasted it un-rinsed - I would imagine it would be slimy though. Canned food takes a long time to go bad unless the can is damaged in some way, how long ago did you buy it?

Stupid question but, do you know that you actually like them? Have you had them before? I find them pretty unpleasant on their own but delicious in a curry or made into falafel.

Let's resolve the egg question, you can make a fab scrambled egg casserole in the microwave, I do it all the time.

Pick your vegetables, spinach, broccoli, scallions, peppers, tomatoes, whatever floats your boat. Microwave a handful in a bowl for about 2 minutes. Then drop two eggs (or egg whites or egg beaters) into the bowl and mix well. Add a small handful of cheese and mix again. Any cheese works, I've used everything from cream cheese, mozzarella, asagio, cheddar, etc.

Microwave for two more minutes, stir.

Microwave until done, maybe another minute.

(Microwave times will vary depending on the bowl you use and your microwave. Play around until you get it right.)

You can easily add precooked ham or breakfast sausage (cut up pretty small) if you roll that way.

You can eliminate the veg if you roll *that* way -- and it saves some time.

You can get the veg together the night before and have it all ready in the bowl so you just have to toss it in.

This make a simple one bowl meal you can make super quick on your way out in the morning. I love it because I can work the timing around getting dressed.

Probably because they weren't rinsed. That fluid that they are canned in are good in a soup/stew/chili because it can help thicken it, but the garbanzos straight from the can without rinsing....mouth feel would be pretty slimy I think.

I like them roasted with Old Bay until they get hard and nutty. Makes a good snack.

Well, I am the weird one in my household, actually I have converted Damian to the dark side as my sis and niece puts it.

A typical stir fry sauce and marinade consists of 3 table spoons canola oil, on table spoon sesame oil (for flavor,) one clove of minced garlic, i cup of minced onion (I prefer green onions,) two teaspoons of ginger and one table spoon of soy sauce (can use low sodium if you want.)

The meat is chicken, lean beef or pork chopped up into half inch squares, and you can use as much or as little as you want.

Marinade the meat for a half hour, then put in Wok or electric skillet.

When the meat is about 3/4 the way cooked, add cut up FRESH spinach, fresh green beans or peas, chopped pepper, slice water chestnuts, bean sprouts, shredded carrots, and broccoli florets. Cook until the veggies are done but not super soft.

Serve over rice. ( I cheat on the rice, I have a rice cooker)

Other than that everything I cook is either baked, sauteed, steamed or if cooked in oil, I use less than three tablespoons of the stuff.

I dont cook with salt.

Make my own sauces from scratch, to avoid unnecessary sugar and salt.

And doing this I have lost 120 pounds.

In another thirty pounds I get to have two slices of Pizza hut pizza!
