I have two sitting on my counter right now. Any ideas what to do with them? I don't like guacamole. I bought them because they were on offer but have never really had them before.

Oh and also - we harvested carrots today! We can now officially say we grew our own veg! Got some lovely plump strawberries soaking up the sunshine and getting ripe, too.

Put them on a burger or sandwich.you can eat them plain too

You can use them as soon as they are soft enough to squish a bit, a rock hard one isn't ready yet, I don't let them get too soft, firm with a bit of squish is when I use them.

Congrats on the veg!

** Oh, and as far as use... I just add it to sandwiches and stuff... try using it instead of butter, just mash it up good so it's spreadable, or let them go softer before use.**

I could live on fresh avocados. Squeeze it slightly and there should be a bit of give in the flesh if it's ripe.

*edited to add: If you don't eat it all at once, put the pit back in it and refrigerate, it won't brown too much.

I've always gone by feel. I like when it's a little soft, almost like the feel of an orange. Too soft and it's likely brown.
There's another method. There's a brown belly-button looking thing at the end. If you can easily flick it off, it should be ripe. I've tried it and it does seem to work.

ETA: We usually eat them on burgers with chopped grilled onions and cheese. We also use them for guacamole (of course), fajitas, and chicken sandwiches.
I've tried a chocolate mousse recipe (after a suggestion here) using avocados and it turned out good - very rich. My kids didn't believe me when I told them (after the fact) that I used avocados.

Congratulations on your garden, Athena. I find gardening fun, exciting and rewarding.

Avocados are wonderful, considered a "super food," and are full of Vitamins B6, C, E, K, folate, selenium, zinc, carotenoids, antioxidents, phytosterols, protein, Omega 3 fatty acids (18 essential amino acids), fiber and are low in calories.

I love this sandwich: bread, mayonnaise, avocado, tomato, thinly sliced onion, salt, pepper, garlic granules. Sometimes I'll throw on bacon, sprouts or thinly sliced cucumbers, if available.

oooh thank you, that chocolate mousse sounds great.

Sounds like avocados might be really useful now that I've suddenly found myself dairy free. Clearly I have some experimenting to do.

They are wonderful. Almost anything that you want to make richer, or give that "fatty" mouthfeel and satisfaction to, can have avocado added. Just think of them like a condiment that's actually pretty good for you.

Well I've squeezed my avocados and my oranges for comparison. Seems they need a couple of days yet.

I've seen a recipe for avocado ice lollies which sounds heavenly - anyone tried it?

Avacado ranch dressing is yummy...a lil ranch, a lil mayo, a lil avacado, a few shakes of hot sauce... yum

I made some fish tacos last night for the first time, and the recipe called for thinly sliced avocados.
I don't like fish at all, but they seemed to be a hit with everyone else. The avocados added a nice
bit of color as well as being healthy and delicious.

I do the squish test as well as shaking to see if you can feel if the pit is loose inside.

They should be a bit less than firm, but not too soft. The ones you get at the market tend to be too hard or too soft. The too hard ones you can let sit out for a day or so to ripen, but please don't put them in the refrigerator.

A simple avocado salad:

1 ripe avocado
1 ripe tomato or several cherry sized tomatoes (what I am growing this year)
1 cucumber or zucchini

Chop the vegetables and coat with a vinegar and oil dressing, like Italian. If you like, you can add chopped scallions, peppers, olives, or any other vegetable that sounds good to you. It should chill for about an hour.

Athena, if you want them to ripen a bit faster, stick them in paper bag for a day or two. Should soften them up quicker than just letting them sit.

Avocados suck in my area. :( I got used to eating them when I lived in California, often in salads or on hoagies. Here, they're all over ripe, with air pockets inside and lots of brown. I used to be able to get a bag of good avocados at Sams, until this past year. I'm wondering if they are packing them tightly and then gassing them to make them ripen up sooner...because I've had some freaky stuff happen. One side of an avocado will be very ripe, while the other half is hard as a rock.

On the super rare occasions when I can get my hands on a good one, I cut mine in half, remove the pit, and put some medium salsa in the hole, topped by a little sour cream.

They should feel a little soft - like you could squeeze it, but it would take a bit of pressure to do that. Mushy avocados are overripe.

Avocados are good sliced up on sandwiches.

I love avocados and can eat them almost any way possible. One good thing to do with them is use them in place of mayo in chicken salad. It's still the creamy texture but yet so much better imo.

Pinterest has tons of interesting recipes with avocados. My daughter once bought a California Avocado Smoothie. It was interesting. It was creamy like a smoothie, sweet but yet a light and refreshing drink for in the summer. It was an acquired taste though.
