Ahh, the mayo myth persists. Modern mayonnaise isn't an issue when it comes to picnics - commercially made mayo does not contain raw egg, which was the issue previously when it came to potato salad sitting out. Now, the reality is that ANY food is going to break down if it's left in less than ideal conditions, and all bacteria loves warm and humid weather. Whether it's a mayo based salad or a vinaigrette, it's not going to taste too good after sitting in the heat and humidity for a couple hours. If you're doing a buffet to nosh on over a period of time, put out small quantities at a time, keep extras on ice, and refresh the buffet every so often. If it's a bunch of people coming and you don't have enough coolers, ask people to bring coolers filled with ice to help keep food and bev at appropriate temperatures.
