I don't eat much steak. Too expensive. Pasture raised steak runs at least $23/lbs here.

I'm buying a side off beef later this year, and that'll be the first time we have steak again at home in over 3 years... though... that gives me the idea: considering that nobody arounds here seems to care for entrails anyways, maybe I can make a deal with my farmer to buy a bunch of other people's left overs. I mean, they must do something with that stuff, right?

Which is hilarious cause high grade pasture raised sweetbreads can cost you more than steak does in Europe.

I don't like the texture of sweetbreads. And tongue is a deli meat, meant for sandwiches.
But years ago in New Brunswick I had the great pleasure of eating cod cheeks. The best part of the fish, hands down.

Hey, we have circled all the way back around and are again on topic! Take Ishtar's "Tongue in Gin" recipe and add Des's "cod cheeks" to it and we have....TAh Dah... " a tongue in cheek (in gin)" look at CM!
