I like collards with ham hocks and plenty of butter - what about you?

NastyDaddy -> RE: collards (8/28/2006 8:31:57 AM)

Actually raw ham hocks are usually totally saturated with PIG FAT... and what is the butter for... is it garnish?

Do your health and your arteries a favor.... season your collards with some smoked pork chops and limit butter use only to your cornbread. Smoked porkchops and ham hocks are far better for seasoning "greens"... including pole beans... yum!

bon appetite!

Actually I season my greens with a little liquid smoke, sugar and onions then I mix the collards with some turnip and mustard greens to give them a little different flavor.  I can't imagine what the butter would be for except for the cornbread but if you mash the cornbread up in the greens and eat it that way, there is no need for butter.

I thought this was a thread for doms who could not spell or those looking for a collard of training.

mugwump -> RE: collards (8/28/2006 8:47:47 AM)

er...
whassaaaa??

NastyDaddy -> RE: collards (8/28/2006 8:49:20 AM)

This is a thread bout "green collards"... not consideration collards, house collards, or off-the-market trophy collards, or even the ever popular velcro collards... those discussions are in a different thread.

Aubre -> RE: collards (8/28/2006 8:56:15 AM)

Actually, I had gotten tired of seeing that someone had been "collard" or that they had "collard" someone so I felt like a thread on greens was in order.

agirl -> RE: collards (8/28/2006 8:59:24 AM)

Erm.....What ARE collards, what are pole-beans, what is cornbread, what is liquid smoke, what are mustard greens...and is a *ham-hock what we call a *trotter* here in the UK?

hopefully, agirl

Aubre -> RE: collards (8/28/2006 9:06:17 AM)

Collard greens and cornbread are staples in Southern US cooking. Cornbread is a bread made from corn meal. I don't know what a trotter is, but here's info on a ham hock. Liquid smoke is a seasoning and mustard greens are the leaves produced by a mustard plant.

bandit25 -> RE: collards (8/28/2006 9:10:00 AM)

Can you even buy liquid smoke anymore?

gooddogbenji -> RE: collards (8/28/2006 9:14:34 AM)

I got collard, but I ate it.

Honestly, I don't understand why so many people make such a big deal of it on this site.  And, for that matter, getting collard for more than a week just seems, well, unhealthy.

Yours,

benji

Look in the grocery store isle that contains Worchestershire Sauce and Steak Sauce....

bandit25 -> RE: collards (8/28/2006 9:31:05 AM)

Damn!  My mom used liquid smoke on EVERYTHING!  She was the worst cook, but one hell of a baker!

EmpressLeo -> RE: collards (8/28/2006 9:32:42 AM)

Bacon in the greens is fantastic
