Crawfish, crawdads...Whichever you want to call them. They're kind of like a smaller version of a lobster, but you don't eat their claws. You rip off the tails, peel off the shell, eat the meat, and then suck the juices out of the head...if you want the real experience, that is. If you can't handle eyes looking at you, don't try them. Also, driving through the country during the fall in some Southern states (mountainous regions especially) is beautiful. Fantastic sight. Just be aware that Southern folks are quite...different from anyone else. We're an insane bunch at times. But we are also polite.
