Low carb works because at a molecular level, your body need simple sugars to make energy (ATP). If you're not taking in carbs (sugars, and starches that break down into sugars), your body burns long term energy (stored fat). Because of this process, you'll lose weight, but don't be surprised if your energy level is low for a while. However, this does not mean you can eat anything you want as long as it's low carb. High fats (especially animal-based fats) are still bad for you, and an excess will still be stored as fat on your body. Your best bet? Eat plenty of lean meats (chicken, fish) and low carb veggies (especially salad greens except iceberg lettuce, brocolli, cauliflower, red bell peppers); limit your fat intake to recommended serving sizes of things like salad dressing, a teaspoon of olive oil to cook with, etc. Avoid processed meats like bacon, sausage, deli meat. A little milk for your coffee is better than heavy cream. Fresh vegetables and lower carb fruits in their whole uncooked forms are the best - avoid canned, dried, or otherwise processed. Frozen plain veggies are ok in a pinch (and handy). If you do chose to do Atkins....read the book, read the book, read the book. Read the book. Did I mention - read the book? Most people who do Atkins do not, and miss a lot of necessary information, like steak once a week is ok but NOT every night.
