I've never tasted foie gras, because it's banned here.  I have few qualms about eating meat and will even confess to chowing down on a couple of protected species whilst travelling.  However the idea of inducing actual illness in an animal just to improve the flavour strikes me as needlessly cruel ...conjures up images of power lunches, the 80s and shoulder pads in a world where many people can't afford rice. Bon appetit.

I am not aware of what you were referring to in my post or which post. My last one talked about the humane killing of the laws of kashruth(kosher), none of the soaking or draining is to improve flavor .

Gastronomy is a luxury. It's not for nothing that it's called 'les arts de la table'. Arts which are dying, incidentally... In the meantime, I understand why it strikes you as decadent. France has a history of culinary indulgence, and some things just don't export well.

A quick report, I did get a reservation and we had a great meal. The pate was perfect. I had the seared foie gras de canard while she got the biftek frites and they were both excellent. The chocolate mousse for dessert was a perfect end to a very rich meal.

I heard a table that sat down while we were eating get told that the restaurant was out of pate de foie gras so a lot of people muct have been ordering it.

LL - I was actually talking about gavage.   As to haggis, I'm of French Caribbean descent and many Scots balk at the idea of my beloved frogs legs.

kS - "culinary indulgence" is cultivated in various ways around the world and that's cool ...I am just saying that giving a bird liver disease to alter its flavour is a bridge to far for me personally.

I did a good dinner for my ex about 10 years ago.

Sevruga and Ossetra caviar from Petrossian w/  Pol Roger 90 Brut

Sonoma Fois Gras poached in Monbazillac w/ Ch. Suiduiraut 93 Suaternes

Lobster Ceviche (my own variation) w/ orange-tequila viniagrette w/ Egon Müller Sharzhofberger Spätlese 85

Zinfandel Sorbet

Pheasant with truffles (see recipe in La Rousse "Gastronomique")(Truffles from Le Maisson de Truf  - Paris) w/ Louis Jadot Clos des Ursules 93 & a bottle of Jean-Marc Pillot Chassagne-Montrachet Les Chenovettes (just wow)

Grand Marnier/mango/coconut Bread Pudding w/ White Chocolate Sauce and raspberries w/ Ridge Zinfandel Essence

And an 82 Gruaud-LaRose, 76 Graacher-Himmelreich Riesling Auslese, 93 CLos de Lambreys (I dig Burgs), 90 Chateau Montrose, 96 Chablis Les Clos, and various "lesser" wines. A couple well-rravelled folk told me it was the best dinner they ever had in their lives. My Francophile friend Ila from LA told me, "On a scale of 1 to 10, it's off the scale."

When I feel like cooking, I can cook.
