You can bake it,  I guess.  Don't know how well it would come out though.

  holly, I have to admit that right now, after perusing the recipe and pictures, I am absolutely drooling to try one. It looks scrumptious to me, even if I couldn't eat a lot of it....

(There are many days when I'm careful to watch what I eat. So I can eat a little of things like this without guilt or worry....)

i doubt baking it would work. I have used raw bacon in the oven and it is always mushy

  I wonder if a cast iron dutch oven on low in the oven would work? Or I'm thinking I heard once of something that lets you smoke food in the oven.... Maybe I should try finding out about it.

if you were to mix the sausage layer with egg whites to hold it together, omitting the outer layer of bacon, and rolling cooked bacon in the sausage, you could bake it as you would a meatloaf.

Or maybe brown up the outside bacon lightly first, then add the inside sausage and crumbled bacon. Roll then bake in a low oven with maybe a quick finish under the broiler to finish browning?

ETA - maybe using a foil tent? Ohhhhh, the possibilities.....

  I really need to go eat lunch, dag nabbit......

And therein lies the key.  People freak out about something like that because they assume it's something I have for every meal.

It's called moderation, folks.  Eat "properly" the majority of the time.  That way the occassional splurge isn't a disaster.

And balance things out.  I eat stuff like this,  yes.  But I also have quite a healthy LDL level.

perhaps bake it till the sausage is done... then a little time under the broiler to crisp up the bacon?

That sounds like it could work. After all,  a broiler is simply an upside down grill.  :-D
