I know! The horror of it all! That I would use a boxed cake mix. I know my limitations. Baking a cake is one of them. They come out looking like the Elephant Man on steroids. It is not pretty. Therefore I learned to use a box mix and save myself the desire to flog the hell out of a cake.

I'm like you, a good cook, but not a baker. When my son was in pre-school he had a friend whose mom was a pastry chef, she made him an AWESOME shark cake for his 5th birthday. Red velvet cake with gray buttercream icing and vanilla pudding colored red for filling. She put swedish fish in the filling and had a doll hangin out of the mouth. You cut into it and it looked like a bloody mess! The kids thought it was the greatest cake they ever had, but it did look gross, which was the point (5 year old boys like that kind of stuff, lol).

Since this cake is for the adult party, save yourself the trouble and buy the cake. I'm sure everyone will be plenty impressed with all the good food you are going to make.

As for me, I love buttercream icing, but don't care for cake. I would get a few boxes of brownie mix (the only thing I bake, really) and make a giant layered brownie with lots of chocolate icing!

Call your local college/high school for their continuing education classes and ask if they ever do one on cake decorating. Then get the number of the instructor and pay her to make a cake for you.

Here is a really good recipe, I will include the cake part too

This is for a Chocolate Cake with Vanilla Buttercream Icing. It is really pretty and delicious too.


Chocolate Cake

Makes 2 9" layers Bake at 350o

Cook and stir in a double boiler, or large saucepan with 3" of water, place smaller saucepan in side with ingredients.

4oz unsweetened chocolate
1/2 cup milk
1 cup light brown sugar, firmly packed
1 egg yolk

Remove when thickened. Let cool.
In another bowl mix
2 cups sifted cake flour
Re-sift with
1tsp baking soda
1/2 tsp salt

In another bowl make butter mixture.
Beat until soft,
1/2 cup unsalted butter
Add and cream until light,
1 cup sifted sugar
Beat in one at a time
2 egg yolks

In another bowl mix,
1/4 cup water,
1/2 cup milk
1 tsp vanilla

Add flour mixture to butter mixture in three parts, alternating with milk mixture
Stir batter until smooth after each addition
Stir in chocolate mixture, batter may look speckled

Whip until stiff, not dry, soft peaks,
2 egg whites
Fold lightly into cake,
Bake in prepared pans (thin butter and lightly floured) for 25 minutes

Butter Cream Icing

Dont stop stirring or you will get lumpy frosting

5Tablespoons flour
1 cup milk
cover with paper so no crust is formed.

In a bowl beat
1 cup butter
1 cup granulated sugar
Add paste to butter mix
Beat until fluffy
Add 1 tsp vanilla

PS on the Fondant tip. Everything I ever heard of it was to buy it pre-made if you want to use it to decorate a cake.

I love marzipan but some people detest it.

Hey, you add the eggs and the oil amd it makes it yours! May I reccomend books called The Cake Mix doctor cookbooks, that gives you recipes to turn cake mixes into everything from cookie bars to Tiramisu to Cheesecake brownies.

I love that book! I have been on a cake balls kick lately but using brownies with cream cheese frosting instead. Almost like a truffle.

OK, I used to make cakes, but I decided I wasn't that much of a masochist after spending 12 hours decorating a damned three-layer merry-go-round cake that the fucking bitch absolutely adored...but never fucking paid me for!

Anyway, rant over. I used fondant to make a dress for a Barbie cake...but I put the Barbie cake on a buttercream frosted base. Worked great, because fondant tastes like shit, so peeps actually never touched the Barbie part of it. It may still be around somewhere, 'cause that shit lasts forever!

As for the buttercream, the only change I would make to the recipe presented here is to use half butter, half shortning. Yes, it discolors it a little, but not too much, and it tastes much better, but still has great body for making decorations. You can still use fondant for making the decorations, I got pretty good at making fondant flowers and stuff before I gave it up.  

The suggestion to play with the fondant is a great one, because you will probably go with the Viva method afterwards. Wally World and Michaels sell Wilton cake products, and as suggested before, an offset spatula is invaluable for making smooth icing.  

Another thing, have you ever made a multilayer cake before? When you get to three layers, the cake tends to sink in on itself, so you need to actually support each layer with those plate and tube thingies. Oh, and don't feel bad, I used boxed cake mixes too. People loved 'em.
