I'm going to attempt to make a birthday cake for my daughters' birthday party. It will be a triple layer cake with the bottom layer being 14", the middle layer is 10" and the top will be 6". All of those will actually be two 2" cakes. Buttercream is the filling. I've never used fondant before and really want to try this. I plan on covering all the layers with a white fondant and then decorating with pink, purple and mint green fondant ribbons and hearts. I do know that I need to put a crumb coat ( I think that's what it's called) of icing over the cakes before I lay the fondant on them. Any other pointers? Am I nuts to be attempting this?

Try Ganache. Its way easier and beautiful too.

I was originally planning a Mad Hatter cake...where the levels are all crooked. But realized that I would be really nuts to attempt that.
I will take pics and post them if it comes out decent. The party isn't for tw more weekends so I have time to either nix the whole idea or gather more info.

Aileen, i know a couple of bakers. they say fondant is a gimmick and tastes like shit.

I know...I actually found a specific recipe for it and all the reviews say it tastes fantastic. Like a buttercream icing. So I'm gonna try that.

I've seen the mad hatter cake that looks really hard.  I was just at a babyshower and they did fondant cup cakes.. Maybe easier to that for your daughters party.  Just an idea

You can pour ganache over and let it trickle down the sides. You can make it in colors chocolate ganache, white chocolate ganache or with food coloring mixed in the white chocolate. Its chocolate and cream and poars very easily.

yes you need a crumb coat. However as someone else said Fondant is a bitch. it's tempermental and in general just pisses me off when I've worked with it.

My suggestion is to try it on something much smaller in the two weeks before the party and I have a feeling you'll change your mind on it. I've done cakes for years for friends and I have never liked fondant. Sure it looks pretty if you get it perfect but it is a bitch to handle and get it perfect. It also tastes like crap in my opinion.

You may feel differently about it...but get some and play with it. I would go with a ganache or a buttercream myself. I did a Marshmallow fluff based frosting on a cake last week that was Awesome! it took a bit to get that Barbie Pink color but it was fab when it finally came together.

Fondant is only for looks.  It tastes horrible.  Birthday cake you want the kids to eat, right?

You'd be better off covering it with marzipan.  You can roll marzipan out the same way you do fondant.

If you absolutely want to try fondant at least make it yourself.  The stuff they sell at cake stores that is pre-made is
inedible.  The stuff you make at home isn't much better.

Google "marshmallow fondant" and try the website http://www.cakecentral.com ... tons of good advice, lots of marshmallow fondant tips, mad hatter cakes, etc.  The abbreviation for marshmallow fondant is MMF, so don't let that throw you.  LOL.

You can also take regular icing, beat as much powdered sugar into it as your mixer can handle, then turn it out onto a board (dusted with powdered sugar), and knead as much more powdered sugar into it as it can handle.  It becomes dough-like, and you can use that instead of fondant.  It's easy to practice this technique with a small cake or some cupcakes, and see how it works for you.

If I can get the picture to load, you'll see two cakes I made for my youngest's first birthday.  In the middle is her favorite bear, which has a blanket sewn to its paw.  The cake on the left is a "smash cake", and the little bear is holding a blanket made of marshmallow fondant.  The cake on the right is the cake I served to everybody else, and it's also holding a blanket of marshmallow fondant.  Oh, and please don't judge my abilities by these pics, LOL, the resolution is crummy and the bears kind of look like brown blobs.
