Based on all the recipe threads we've had and all the trades we've done of recipes, I put to you - what are the top 5 or ten (ish) things you think everyone should know how to cook.

If you are vegetarian, please ignore the meat suggestions, if you keep Kosher, please ignore any pork suggestions, etc.

In fact, I would love to see replacement suggestions!

Feel free to add an actual recipe... or your specialty, that's cool.

I'll start -

I think everyone ought to know how to:

1. Grill a steak

2. Make a decent salad (take your pick of type - I like to make a Greek salad)

3. Make a good cup of hot chocolate (harder than you'd think)

4. Create their own pasta sauce

5. Bake a chicken.

My specialty is making spring rolls. They are incredibly easy to make, and everybody loves them! I use whatever veggies or protein I want to use plus any sauce I want to add. It makes me eat many more veggies than I normally would.

Hangs head in shame....

I cannot cook. I can make eggs, and anything that can be cooked on a George Foreman grill or a toaster oven. I can boil water though.

I can however, make reservations. :)

Thankfully, no man was with me because of my cooking, my other skills kept them happy.

Red, just because you DON"T cook and maybe even CAN"T cook doesn't mean you don't have an idea of what people (including your lovely self) ought to be able to cook. (I can't grill a steak, although I think I ought to be able to and I"m embarrassed that I can't, but oh well... I make slamming spring rolls).

Good hot chocolate

Start with 1/2 cup of unsweetened cocoa.  The better the cocoa, the better the hot chocolate.  Hershey's is not my top choice- (well, Poulain is, but Scharfenberger is pretty good.) 2/3rd cup of sugar, dash of salt- add 1/3rd cup of water.  Mix everything together and bring to a boil over medium/high heat.  Here's the trick- lower the heat and keep stirring for about 5 minutes or so until the mixture thickens.  It does need to keep boiling, but if you cook it too hot, you'll scorch the bottom.  You're polymerizing the sugar which makes it thicker.  Add about a quart of milk (maybe a little less)  The cocoa should be a bit too thick for most peoples taste- continue heating till hot, but do not boil.  Add Jameson or a decent rum to taste (generally about 25% of the cocoa).  Kids can add more milk instead.

Oh believe me, I KNOW what I should be able to cook. My sister in law can cook lobster, make paella, killer mac and cheese, amazing steaks, an entire turky, mexican food and the best margaritas in the world.

Seems like everyone should be able to make a basic omelet, loaf of bread, pot of soup, meatloaf and a great steak..........luci

A good home made pot of soup.

Roast turkey with mashed potatoes and gravy.

Home made mac and cheese.

Stir fry.

Cooking fresh Iowa sweet corn just right and cooking a fresh batch of morels, both picked the same day as eating.

Home made ( from scratch ) biscuits and sausage gravy.

Perfect cup of coffee.

Home made brownies from scratch.

A basic Chicken Cattiatore

dredge cut up chicken in seasoned flour(salt and pepper)

Brown chicken in a large frying pain with lid in olive oil over medium high heat.
After chicken is browned on all sides add 1 cup red wine, crushed tomatoes, a can of tomatoe paste, garlic and italian seasonings and about 8 ounces of sliced mushrooms. Turn down heat , cover and simmer for about 45 minutes or longer(chicken will fall off the bone the longer you cook it so dont worry)

Serve over pasta with parmesan.

Bread/Rolls

Apple Pie/Pumpkin Pie/Cherry Pie/Chocolate Cream Pie

Sour Cream Pound Cake/Red Velvet Cake

Perfect Pot of Beans

Pot Roast

Holiday Turkey w/Cornbread and Sausage Stuffing

Fried Chicken

Biscuits

Chowder (Lobster or Clam, Boston or Manhattan)

Salsa/Pico De Gallo

Tortillas (Flour and Corn)

Guacamole!

No one on this side of the pond needs to know (or wants to know?) how to cook meatloaf.

I'm vegan and it's been a while since I've had a man to cook for, so I'd probably struggle with the steaks too. I can make my own seitan though, that's hot right?

My top picks are ........

1) Scrambled eggs or an omelet of one variety or another.

2) Mormon casserole.
Mounds and mounds of peeled and diced potatoes, minced garlic and sweet onion (to taste), 2 Tbs of cornstarch mixed into equal parts of cream and half-n-half to cover the potatoes 3/4 high, lots of real butter, ricotta cheese dotted all over the potatoes, slices of provolone cheese blanketing the entire dish, a 1/4 inch of sharp cheddar cheese covering everything, salt and pepper (to taste) ... all combined in a large baking dish. Cover and bake approximately 90 minutes, uncover and cook another 10 to 15 minutes (until the cheese browns and crisps). It serves an army of people. Any sort of meat or veggies can be added to 'Beef" it up. I have used small chunks of Ham, Roasted Chicken and Turkey, Brisket and Pork or Beef Roasts. All have tasted wonderful and fed an army when necessary.

3) Large chunk of meat ... Beef, Pork, fowl or fish.

4) Lasagna (meat or veggie).

5) Birthday cake.

I think everyone should know how to make really good mac n cheese.  Because I love it & I don't know how to make it the way I like it.  I can make a fabulous meatloaf & pretty much don't like anybody else's version.  I make killer beast stew.  And my Southern fried chicken is most definitely Southern!  And I make a great fresh s'ghetti sauce that I love to put on s'ghetti squash.

Edited because I nearly forgot about my Anderson omelet.  You take whatever meats & veggies you have in the frig, fry em up, pour beaten eggs over them & cook on top of the stove till done halfway up.  Then put it on the middle rack of the oven & turn on the broiler, not too high to cook it from the top down.  Just before it's done, put cheese over the top & finish broiling it till melted.  This should all be accomplished with no browning of the eggs!!!

I make really good brunch dishes.
Baking. i do well.
i have made homemade fettucini noodles, ravioli.
Everyone should be able to make a good cheesecake.
Dipped strawberries are easy and are impressive.

Five Easy Pieces :

Roast Chicken. So easy and good. Make it on Sunday. Stuff it with lemon, lots of garlic and fresh herbs of your choice. I like oregano or Rosemary. 10 minutes prep, thensit back and let your home fill with wonderful aroma as the chicken roasts.

A simply sauteed fish filet. In butter. Careful to not over-cook it. Plate the fish, add garlic to the pan then a squeeze of fresh lemon. Total cooking time, about 10 minutes. Fast, easy, delicious and healthy.

French Onion Soup. There are decent stocks in your grocery. They come in a box, not a can or envelope. Very easy , yummy and satisfying.

Stews of all kind. The crock pot is your friend.

And , as has been mentioned a few times, the omelette. Versatile, make it breakfast, lunch or dinner. Fillings are almost endless. Quick and so easy.
