Okay...I'm committed.  I just tossed out the cranberry juice cocktail I had, as well as some beautiful tiny little new potatoes.  I have a bunch of salad stuff, but I think that's okay, no? 
 
I'm doing what I remember of the South Beach Diet, but I have a couple questions I can't find answers to just yet.  Who knows about:
 
Jiicama, speghetti squash or if I'll ever be able to eat the new multi-grain pastas that are touted to be a good source of protein and ALA Omega-3?  (hmmmm...I just added that word multi-grain...perhaps that is my answer.  <sigh>)
 
I did find this cool carb-counter on Atkin's page:  http://www.atkins.com/carb-counter    ...but why does boiled asparagus have twice the carbs as canned?  Dang...seems ALL canned veggies have fewer carbs than the same amount simply boiled.  hmmmmmmmmm
 
Oh never mind, I found the Jicama...I guess I'll be tossing that big boy away, too.  Damn!!!
 
I generally just have one cup of coffee in the morning, but I add milk or 3 rounded tsp poison white powdered-milk.  Is that gonna throw EVERYTHING off?
 
I figure if I talk about this with like minded people...I'll be more apt to stick with it.  Thanks!

I'm doing Atkins, and good news. heavy cream in your coffee is lower carb than milk. That is something I enjoy! Don't worry tooo much about veggies - as long as they are non-starchy you can have them. I hadn't come across the carb differences in canned vs. fresh, but I personally would go with fresh - this about health after all:)

Hey Beverly :)

Looking at the site, the asparagus is all very low carb, under 3 grams a serving. You won't hurt yourself eating it.

Be careful with the squash; some is quite starchy, like the winter variety, some isn't.

Do you like cream? That would be better to add in the coffee than milk, or the powdered stuff.

Most veggies are wonderful, lettuce, spinach, broccoli, cabbage, cauliflower, and tomato and onion, in small amounts.

But in that in the beginning, carbs are such a serious no-no...I really want to know what will be 'okay' to add in later.  I love my fresh veggies...and am just floored that fresh are carbier than canned!  Ugg
 
Oh...and I just love any number of types of canned beans: kidney, garbanzo, white, black, butterbeans...I could go on.  No more of THESE, either?  I thought beans were high in protein!  Dammit...seem high in carbs, too.  Sheeshhhhhhhh
 
I always put jiicama, peppers, beans, carrots, brocolli and such in my salad.  I guess that's gone, too.  Dammit!!!
 
I'm gonna go find what it is I CAN eat for the first month or so!

Okay...that's the sort of stuff I need; thanks, Level!!!  But about that squash; do you 'know' spaghetti squash?  Lordy...there is so much research to do!  (Thank you again for all those cool links!  Dr.B is great!).  Anyway, it's not at all like a winter squash...it's light and stringy; when cooked 'al dente' is is like sphegetti...with a tender crunch.  Yummieeeeeee, too.  I wonder if it's okay?

(you'd think somewhere I could find the carb-count!)  But with so few calories... it seems more like celery than anything else!  I'm guessing it has few carbs...in spite of being a damned winter squash!     LOL

I lost thirty pounds and seven inches off my waist doing a low carb diet. I followed the Curves meal plan of counting Total Carbs rather than Net Carbs. Twenty for two weeks, forty for two weeks, and then stayed under eighty for another three to four weeks.

If you start now, your income tax return will help you be able to buy a new wardrobe.

Broccoli and peppers are fine. Carrots, in small amounts, are okay for some folks. Beans, very starchy [:o]

Dr. B is indeed a great guy; he gets a tip of the hat from me, for sure.

So...I'm gonna have to count EVERYTHING?  What kind of stuff were you 'allowed' in a day of say...20 grams?  And...is 20 grams in keeping with the Atkins or SBD thang, I wonder?

If you enjoy beans, black soy beans are low carb. I found them at the healthy food store.

I would count everything, at least until you are on solid footing as far as knowing what is what, Beverly.

Carrot: medium =  7.4     Jicama: half-cup =  5.7
 
Jicama seems fairly benign, then…way less carbs than say an apple, even!  Speaking of fruit; seems mangos are the way to go, but dried blueberries aren’t too bad, either!
 
I get the difference in carbs and net carbs…but how does one ‘intuitively’ know which is better to be eating?  Is there a secret or do I have to research every single thing I eat?  (lordy, I’m glad I don’t eat much processed food!).

Okay then, Level…I’m gonna find out how of ‘whatever’ carbs I can have through out a day and maybe do some meal-planning.  I want to know what goodies I can keep in a salad, for example, but, this difference in carbs and net carbs is a bit confusing, no?

Okay, that sounded like I want quantity; it's the quality though.  I want to be able to mix up breakfast a bit say... and know a small handful of dried blueberries or a quarter cup of jicama on my salad isn't gonna throw everything off.  Yanno?  I'd hate to wonder why the weight isn't just melting off me, only to THEN discover garbanzo beans (a fav...) are what's doing it.  They seem so........spare!
 
Oh, and I just searched Cm for 'low carb' and found 14 pages of stuff!  Who knew!  ...  You folks are GREAT!!!

Total carbs vs net carbs: neither one is "correct" for everyone; I know a lot of people that use one or the other and do well. I use total carbs, it's a little easier, and being diabetic, I'm fairly strict with the way I eat.

For those unsure: net carbs means taking the total carb count of a food, and subtracting the fiber grams from it. An example-- a medium raw carrot has 7.3 total carbs, and 2.2 grams of fiber, so the net carb count is 5.1. Fiber is supposed to be indigestible, so the carbohydrate in it doesn't get into your blood stream, thus affecting your insulin.

Blueberries are one of the best fruits; relatively low in carbs, high in anti-oxidants, a handful should not hurt you, but if you find your weight stalling, drop them and see if it helps. Or, if you're diabetic, or severly insulin resistant, you might want to avoid them totally.

For the first two weeks, if it didn't once walk on its own power (in some incarnation or another), I didn't eat it (except coffee with cream - I kept that).  Then after two weeks, I slowly added things like salads and green vegetables, and paid careful attention to how it affected me.  I changed the way I eat not only because of weight issues, but also for how it makes me feel.  I physically feel crappy if I eat sugar.

I didn't start adding goodies to my salad until about two weeks after that - things like olives and a few garbanzo beans and a some slivers of carrot. 

Squash didn't even hit my thought processes, let alone my plate, for several weeks after that.

I remember fasting once.  For 21 days!  Yeah, only drank liquids: water, herbal tea and vegtable or fruit juice mixed 5/50 with water.  I felt GREAT.  But, when, after 4-5 days of salads to 'come of' the fast...I ate a steak and felt like ...lordy: something green and painful...for half a day!  What does eating meat only do to yer innards?

I didn't start adding goodies to my salad until about two weeks after that - things like olives and a few garbanzo beans and a some slivers of carrot. 

Goodieeeeeeeeeeeeeee... I love olives, too!  I'll need to look those up.  For breakfast this AM I minced a japalenno and added about a teaspoon to my omlette.  Was yummie.  Oh...the omlette was eggwhites only.  :)

Squash didn't even hit my thought processes, let alone my plate, for several weeks after that. 


Most of the squash that's bad, I imagine, is the stuff that is a lot like potatoes.  I imagine zuchs and sphegetti squash are okay.
 
Other than eggs, what sort of stuff do you eat for breakfast?  I'm a cook: I need to play with my food!!!   [&:]

Last year was a tough year for sub & I, with weight gain. ( Too much trackside food ) We got through the holidays and are in weight shedding mode. She is an excellent cook and is very creative. We are on day 5 and we have each shed 10 pounds. ( ketosis is a wonderful thing )  We do 0 carbs for 2 weeks, then max at 20 carbs for about 2 weeks, then maintain with a carb & fat conscious diet. Right now it is basically meat, eggs , unprocessed cheese and pork rinds, lol. she puts butter in the frying pan and adds shredded cheese, making "cheese chips" which are an excellent munchie. We use heavy cream in our coffee. After the races this weekend, we will be adding some veggies.

Yes, only meat pretty much for two weeks.  For breakfast, cheese omelette, or sausage and eggs, or even a hamburger patty.  You can have non-traditional food for breakfast.  Think outside the bun. LOL. 

What it does to your insides? Not sure I want to know. LOL.  But I will say this, I don't think there is any one single way of eating that is good for every single person.  That's why I hate when someone says "that's not healthy".  Bullshit, I say.  Maybe it doesn't work for THEM, but it works for me and makes me feel good.  In those two weeks of only meat, I stopped getting the shakes when I was hungry, I had a ton more energy, I was sleeping better, etc.  Like I said, I don't think it's for everbody.  Some people can get that from being a vegetarian - I cannot.  If I eat an apple, within about 30 minutes I am literally ravenous and physically shaking.

One dish we all like is what the ums call "Puffy Chicken".  Season chicken breasts and bake them until they are almost done, then smear on a combination of mayonnaise and parmesan cheese (I don't measure it, I just stir a big spoonful of each together in a bowl).  Put it back in the oven until the top is puffy and golden.

If you need something crunchy, pork rinds fall under the "used to walk on its own" category.  Try them with a little cream cheese, or jalapeno cream cheese.

Unprocessed cheese?  Isn't ALL cheese processed?  Gawd...I have a bunch to read!  And, I'm gonna stock up on steaks!  Here all this time I've been avoiding red meat!  Yippieeeeeeeeeeeeeeeeee... STEAK!

Oh...processed cheese = cream cheese?  I like hard cheese, better anyway.  (I nothin like a couple slivers Asiago or Parmigiano-Reggiano with a glass of lovely red wine!)
