Depending on the sandwich you don't even need a cool pack. And you can pack things that need no refrigeration or heating, he's just being stubborn. and picky.

Then you should do what I do: buy a lunch bag and a cool pack. Make him a sandwich using healthy bread i.e. multiple grain bread and add a piece of fruit. No excuses then and at least he'll be eating something (relatively) healthy.

True, I just don't like to take a chance, I hear that bosses frown on their employees having food poisoning during work hours. It's also not pleasant trying to get home using public transport while in the middle of an attack of said food poisoning lol.

Had it once on a transatlantic flight, apart from everybody hating me for blocking the toilet for hours, I don't think I've ever felt so miserable in my whole life! Taught me a lesson of not scoffing sushi on the way to the airport!

First, congratulations on taking the first step. Is that warm where you are right now? I'm in NJ, and not much is going to make me hot and sweaty in December, lol.

But good job on cooking something. As for using white potatoes a lot of the difference will come in based on how you prepare them. Baked vs. mashed and that is without the butter, milk, etc. Eating them everynight? Bad. Once a week? Not a big deal.

quote:

ORIGINAL: Toppingfrmbottom

But how would you chop under water? I also heard if the onion has been in the fridge for a few days, they're less eye burning.

You aren't chopping underwater. If you run it under cold water, or put in ice water for a minute or two. Onions don't bother me, so I have never paid too much attenion.

quote:

Yup I know what you mean, though I have felt the symptoms like dry mouth and having to pee really bad and not producing much for a while, but other than that I felt plenty fine, didn't have any of the other symptoms of diabetics and it was a real shock the day the dr said you've gone from mildly diabetic to more diabetic than not. Cause more often than not some of us feel fine, or have felt "off" for so long we're not recognizing when we feel " more off than usual"

But you have been aware you are overweight and the doctor told you a while ago, you were developing a sugar problem. TFB, you know I'm not being mean, but truthful. And your weight has caused you to feel physical stuff for a while. Time to stop ignoring it or catering to it.

quote:

I wanted to do Once a week cooking, and I asked him to help, but he said hell no, he's not doing all the food prep for an entire week, and he says what will happen is instead of helping me he'll end up doing it all while I sit back , and that's not true I get frustrated or tired or I don't know how to do something and he tells me to get out of the kitchen, i will do it myself.

This is where you have to drop the whole "babygirl" identification and be a grown up. When you get a little tired, which by the way, should not be happening if you are sitting in a chair doing all the prep, you BOTH take a 5 minute break. Don't prep things you don't know how to do. Better yet, split the prep chores up. He can do those things you don't know how, you do what you do know how. Best? Learn how to do it. Cooking like Mario Batali (is that how you spell it?) isn't the goal. What you need to learn is not rocket science or even difficult. Amazon has a whole page of "Cooking for Dummies"
and the used ones are pretty cheap. Go to a flea market, thrift store or garage sales and you can get cook books for a quarter or so. Your mom must have at least one cook book in the house. Use the internet.

Not for nothing, but he works all week, you don't. There is NO reason you can't do it on your own. You are off to a good start. You sat at the table like I suggested to take take the pressure off your back. All activity is good activity. Do you get tired in the middle of sex? If not, then you can sit in a chair, prep your food and not get tired either.

YOU CAN DO THIS!

quote:

I was thinking if I liked the chicken and carrot and water chestnut tv dinner why couldn't we come up with that on our own, cause it's so easy.

And with a crock pot, you can do a lot of savory things, I just have to compile a menue plan.

Yes, it makes sense, tonight the meat balls are premade you just microwave them cause it's all we got, but I will be grocery shopping on monday most likely and can pick up some ground hamburger and other stuff I can portion out and have ready to go.

You are going shopping Monday. Tomorrow, sit down, look at the sales paper for where you are going. Make a list. You find a meat on sale, figure out what you can make from it. But make a list. NO junk food. Find a healthy alternative. You want something sweet? Buy carmel rice cakes. They are really good for rice cakes. You want savory? Try the cheese ones. Buy some chicken breast, lean steak, pork chops. Leave ground beef out if you can. Yes it is cheaper, but it is the worst choice of meats. Buy some romaine lettuce, some tomatoes, a couple cucumber, carrots.

I know it can be difficult to see and smell all the yummy goodness in the grocery store and not succumb to temptation, but you can do it. Make a list and stick to the list. If your partner tries to go off the list, tell him can't, that you both need to stick to it. Make sure you eat before you go to the store so you aren't hungry and will be less tempted.

Do you like spicy foods? Spicy foods (like hot wings) have been proven to help reduce hunger AND help metabolism.

Pick some recipes from the other two posts that are easy enough for you to make.

Since you can't stand at the stove to saute the chicken, do it in the oven.

Take a half tabelspoon of olive oil and spread it on a baking sheet. I use a paper towel to spread it all around the pan.

Take another half tablespoon (another half if you really need it) and brush it onto some chicken breasts. You can buy them skinless of pull the skin off before you brush the oil on. It really isn't that difficult to pull the skin off.

After you brush the oil on, sprinkle each side with some seasonings. Salt, pepper, garlic & onion powder, red pepper flakes, paprika or chili powder. The last three only if you want to.

Next sprinkle a little grated cheese (like parmesan/romano) on the chicken pieces. Bake at 350 degrees, turning once for about 30-40 minutes. Until you get a feel for when they are done, cut one in the middle to check there is no pink.

You can do all the prep work at the table, and once it is in the oven, you check it about 15-20 minutes and then when it is ready to come out.

Let it "rest" on the stove for about 10 minutes, then slice and put it on top of a salad.

See how easy that can be? If the chicken doesn't brown on top, deduct 7-10 minutes from the cooking time, turn the temp to "broil" and do each side for about 2-3 minutes to brown, but they should brown with no problem.

It wasn't food poisoning but hot damn it hurt, I ate cold beef brisket or something and it gave me the worst direah and gas , and I had to fly home during all the gas attacks, and rather than just let it rip in my seat I was polite and kept going to the air plane toilet to rip one cause the gas pressure hurt so much.

I made my own pot pies. I used pie crust, rolled it out really thin. Then I cut circles out of it with a glass. I used my muffin tin to make them in. Worked really well. I used green beans, diced potatoes, corn, and carrots. I made turkey ones, to help use up the leftover turkey. I also made my own cream soup for it. Store bought cream soups are way too salty.

If you are interested in making your own cream soups, here is the recipe. 3 TBSP of butter, 3 TBSP of flour, and 1 cup of milk. Melt butter in pan along with turkey, chicken, cooked beef, onions, mushrooms, whatever creamed soup you want. Saute for about 3-4 mins. Then add the flour all at once and whisk, into butter and whatever you are making the soup with. Then add the cup of milk, and whisk until mixed and thickened. Will be the consistency of a can of creamed soup.

For the pot pies, dice up all veggies you want in it small, and add to the pan. Then you can add milk or water to make it a little less thick. You dont have to heat it through if you are using it in pot pies.

The pot pies freeze really well. I nuke them in the microwave for about a minute and a half.

Thank you! I have made a pot pie before, and I do love me some pot pie, I'll have to put the ingredients for that on our shopping list.

What can you do with the canola oil and water left from the onions and potatos?

I put it in the pan with the veggies but baring that I'd hate to waste it, I'm sure it's gotten a good flavoring from the o and ps.

TFB, I'm a diabetic also. My nutritionist gave me a 1500 calorie diet. I tried eating the way she had every thing listed for me. But it was too much food. I was stuffed at every meal. And that's not a good thing. She had me eating 3 carb choices for breakfast, lunch, and supper, and 2 carb choices for a bedtime snack. I had to move one of the carbs from breakfast to a mid morning snack. And most days, I don't even have the mid morning snack. I moved one of the carbs from supper to a mid afternoon snack. And again, I don't usually eat that one either. And I haven't been eating my bedtime snacks as I'm not hungry.

The pot pies I made in the muffin tin are a perfect size for me. Along with a salad, I am full when done eating, but not stuffed.

I don't like buying prepackaged food, as it all has way too much salt in it. Consequently, that's why I started making my own cream soups for recipes. I have also made quick applesauce for a cake that called for it. And it tastes just as good as applesauce from a store, or the longer cooking applesauce you can make yourself.

I also use Splenda in all of my baking. I've made pumpkin pies using Splenda instead of the condensed sweetened milk the recipes call for. Any fruit pies get Splenda in them. Same with cookies. And there is no difference in the taste in anything.

You can make gravy from it (again a healthy option is adding those tiny split lentils until they are dissolved) or you can use it as soup and add other veg and things you have around. Alternatively you can pour it into an ice cube tray and freeze it in, so whenever you make something and you need a bit of stock, you use that as it will add taste.

Another tip for when you go grocery shopping. Dont go when you're hungry, you're more likely to buy junk.

I think it's awesome that you want to learn, and are taking steps towards healthy eating, good for you!

Me too.

I think it is terrific, and if once a week is how you can start, well gee just keep doing it til you think you can go to twice a week.

Once you build your skill set up a bit, you will be less frustrated and less frustrating to your Daddy, who might be willing then to teach you some things.

Every big change in life starts with one tiny baby step.

KUDOS!!

You get SNAP food benefits, right? It IS possible for one person to eat quite healthily for $200/month. Don't spend any money on empty calories like soda and juice and don't waste money on processed foods - the "convenience" adds cost and unhealthy ingredients.

Learn how to make oatmeal from steel cut oat groats rather than buying boxed cereal, etc, etc. The glycemic index will be lower as well as the cost.

Instead of trying to prepare meals for the whole week, how about doing it for 3 or 4 days at a time so it's less overwhelming?

Something else you can do is, when onions or peppers go on sale, buy a bunch, chop them all up at once, lay them single-layer on a cookie sheet and freeze them. After frozen, dump them into a big freezer bag and keep them in the freezer. Then, when you need some for a meal, just reach in and take what you need and seal the bag back up. Saves a lot of time after the big job is done. It's great, too, if you just need a small handful to throw in an omelet, etc. And you won't be wasting money by throwing out something that went bad before you got to use it. It's important to do it this way because if you just dump them into a big bag and freeze them, they'll freeze into a big blob. Freeze first, then bag, they'll stay separated that way.

Rachael Ray has a "Week in a Day" series out where she makes a week's worth of meals in one day, and she's all about saving time and effort as well as cost. I've been away from tv for a couple months, so I don't know if it's part of any of her shows, or if it's a book, but if it is a book, your library probably has it. It might be helpful to you.

I prefer the way this is done in Animal, Vegetable, Miracle - they make one base dish, then add ingredients so you have a new dish the next day.

I remember this being done for relish, sauce, and chutney and think there were others but cannot recall or bother to click
