Nope I am sorry it is not menudo, Erin got the first half of the answer when she said chili. However we are now looking for the second half of the question which is a touch more on the creepy side.

And tripe has nothing on this ingrediant.

I kow that in the lower part of Mexico they make a great dish that has ants, crickets and beetles in it, basically any insect that they can find, they cook it up simliar to a chili

Yep, eyeball chili, traditional, in that its what cowboys always tossed in, has a tendancy to stare back at you the closer you come, then it looks..get it? creepy as hell cause...well, its eyeballs in a red texas stew.

It actually tasted alright, just the aftermath wasent pretty.

I am also thinking that it could be the cheek pieces of the cow's head, they are usually not sold commercially but are used as filler in hot dogs adn such, but they are a delicacy in Mexico

I was actually thinking of the tenderloins that go up behind the base of the skull....mighty tender, tasty meat that is often overlooked.

When I worked in a Pan-Asian cuisine restaurant, we would save the head of the fish for the Oriental staff to eat. They would fight over the eyeballs of the fish as well as the cheek pieces.

My father always says that the cheek is the best part.  I'm not much of an eyeball person, but I find that I'm less squeamish about weird foods than all my friends.

Okay one more from the southwestern menu for tonight.

This is something you definitly wont find in a resturaunt or cookoff (that I know of) in fact most people will think its only a rumor that you can eat it. It is something that I and plenty of other people in the world have a phobia of, though if prepared "skinned" and nice and cut up we wouldent know what it was. And it pretty much tastes how you would expect.

Creep factor - Edit..actually I'll chalk it right up to a 9, the more I think about it, the more even I squirm.
